'Affordable' Chicken and Dumplins

So I have modified my Mother In Law's incredible recipe for homemade Chicken and Dumplins to make it points friendly without breaking the point budget.

1 lb Chicken Breast (with or without skin - but remove skin before adding other ingred.  The skin adds that broth-y flavor, but not necessary)
2 tubes Pillsbury Buttermilk Biscuits (value pack has the least points)
 2 cans Campbells Cream of Chicken Soup
         (either the Healthy or 99% Fat Free)
Salt and Pepper to taste


Boil the breasts in enough water to cover them until the chicken is tender.  Add the 2 cans of soup and gradually tear the chicken into pieces.

Roll out each biscuit and cut into 3 or 4 pieces (I use a pizza cutter).  Bring soup to a slow boil and gradually drop the dumplins in.  Add salt and pepper and let simmer 30- 45 mins.  Add water if needed.

This made me eight 1 cup servings at 5.6 points each.  So filling and super tasty - a definite down south hit.  You could serve this to company and they'd never know it was healthy.
